Make simple peanut butter cookies using only peanut butter, sugar, and one egg. This recipe requires no dough chilling and bakes quickly.

  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup granulated sugar
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, mix the peanut butter, sugar, and egg until just combined into a dough. Do not overmix.
  3. Roll the dough into small balls, about 1 inch in diameter. Place them on the prepared baking sheet.
  4. Use a fork to press down on each cookie ball, making a crisscross pattern.
  5. Bake for 10 to 13 minutes. The edges should look set.
  6. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For softer centers, remove the cookies from the oven when the centers still look slightly underdone.
  • Use creamy peanut butter for a smoother texture.
  • This recipe does not use flour, making it naturally gluten-free.
