Ingredients
Scale
1 cup peanut butter
1 cup granulated sugar
1 large egg
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the peanut butter, sugar, and egg. Mix until well combined and a dough forms.
Roll the dough into small balls, about 1 inch in diameter. Place them on the prepared baking sheet, spacing them about 2 inches apart.
Using the back of a fork, gently press down on each cookie to flatten it slightly and create a crisscross pattern.
Bake for 10-12 minutes, or until the edges are lightly golden brown.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a richer flavor, use creamy, natural peanut butter.
You can add a pinch of salt if your peanut butter is unsalted.
For a decorative touch, you can sprinkle a few coarse sugar crystals on top before baking.
