2 large Russet potatoes
1 tablespoon olive oil or avocado oil
1 teaspoon sea salt
1/2 teaspoon garlic powder
Instructions
Peel the potatoes, if desired, and cut them into uniform sticks, about 1/4 inch thick.
Place the cut potatoes in a large bowl and cover completely with cold water. Soak for at least 30 minutes, or up to 2 hours. This removes excess starch.
Drain the potatoes completely. Lay them out on a clean kitchen towel or paper towels and pat them completely dry. Moisture prevents crisping.
In the bowl, toss the dry potatoes with the oil, sea salt, and garlic powder until lightly coated.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
Place the seasoned potatoes in the air fryer basket in a single layer, working in batches if necessary. Do not overcrowd the basket.
Air fry for 15 to 20 minutes, shaking the basket vigorously every 5 minutes to ensure even cooking and browning.
Check for desired crispness. If they are not golden brown, continue cooking for 2 to 3 minutes more.

Notes
For extra crispiness, you can briefly blanch the cut potatoes in boiling water for 3 minutes before soaking them in cold water. Always dry them thoroughly after blanching.
If using frozen fries, skip the soaking step and cook according to package directions, usually at 400 degrees Fahrenheit for 12 to 15 minutes, shaking halfway through.
For a different flavor, substitute the garlic powder with 1 teaspoon of smoked paprika or 1 tablespoon of grated Parmesan cheese added in the last 5 minutes of cooking.
