Instructions

  1. Wash and dry the Russet potatoes thoroughly. Cut each potato lengthwise into 8 equal wedges.
  2. For extra crispness, soak the cut potato wedges in cold water for at least 30 minutes. Drain them completely and pat them very dry with paper towels. This step removes excess starch.
  3. In a large bowl, toss the dried potato wedges with the olive oil until they are lightly coated.
  4. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper.
