Instructions

  1. Combine the dry ingredients: In a medium bowl, whisk together the almond flour and baking powder.
  2. Mix the wet ingredients: In a separate bowl, whisk the eggs until light. Add the almond milk, melted oil, and vanilla extract. Mix well.
  3. Combine batters: Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few small lumps are fine. If using sweetener, mix it in now.
  4. Rest the batter: Let the batter sit for 5 minutes. This allows the almond flour to absorb the liquid, which helps create fluffier pancakes.
  5. Heat the griddle: Heat a non-stick griddle or large skillet over medium heat. Lightly grease the surface with oil or butter substitute.
  6. Cook the pancakes: Pour about 1/4 cup of batter per pancake onto the hot griddle. Cook for 3 to 4 minutes until bubbles form on the surface and the edges look set.
  7. Flip and finish: Carefully flip the pancakes and cook for another 2 to 3 minutes until golden brown and cooked through.
