  • 1 batch refrigerated pie crusts (2 sheets)
  • 3 medium Granny Smith apples, peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1/4 cup caramel sauce (store-bought or homemade)
  • 1 large egg, beaten (for egg wash)
  • Coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, combine the diced apples, granulated sugar, flour, cinnamon, and nutmeg. Toss gently to coat the apples evenly.
  3. Unroll the pie crusts on a lightly floured surface. Using a 4-inch round cutter, cut out circles from the dough. You should get about 6-8 circles per sheet.
  4. Place about 1 tablespoon of the apple mixture onto one half of each dough circle, leaving a small border around the edge.
  5. Drizzle about 1 teaspoon of caramel sauce over the apple filling on each circle.
  6. Fold the dough over to create a half-moon shape. Crimp the edges firmly with a fork to seal the pies completely.
  7. Brush the tops of the hand pies lightly with the beaten egg wash. Sprinkle generously with coarse sugar.
  8. Cut two small slits in the top of each pie to allow steam to escape.
  9. Bake for 18-22 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Let the hand pies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool slightly. Serve warm.
