1 cup apple cider, reduced to 1/2 cup
1/2 cup sour cream

Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan.
In a small saucepan, simmer 1 cup of apple cider over medium heat until it reduces to 1/2 cup liquid. Set aside to cool slightly.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
In a large bowl, cream the softened butter and 1 cup of sugar together until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the reduced apple cider and sour cream. Mix until just combined; do not overmix.
Pour the batter into the prepared bundt pan.
Bake for 45 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
While the cake cools, prepare the topping: In a small bowl, mix the 1/2 cup sugar and 2 tablespoons cinnamon.
Once the cake is completely cool, brush the top lightly with melted butter (optional, for better adhesion) and generously sprinkle the cinnamon-sugar mixture over the entire surface, pressing gently to adhere.
Notes
To reduce the cider, simmer 1 cup of good quality apple cider until you have 1/2 cup remaining. This concentrates the flavor.
For a craggy, donut-like texture, do not overmix the batter once the flour is added.
If you prefer a glaze instead of cinnamon sugar, whisk 1 cup powdered sugar with 3 tablespoons of the remaining reduced cider until smooth.
