Instructions

  1. In a small bowl, whisk together the apple cider and 1/4 cup softened butter until combined.
  2. In a large bowl, cream together 1/2 cup granulated sugar and the egg until light and fluffy. Stir in the vanilla extract.
  3. Gradually add the apple cider mixture to the egg mixture, mixing until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, 1/2 teaspoon cinnamon, nutmeg, and salt.
  5. Add the dry ingredients to the wet ingredients in three additions, mixing until just combined. Do not overmix.
  6. Chill the dough for at least 30 minutes.
  7. For baked donuts: Preheat oven to 350°F (175°C). Grease a donut pan. Spoon or pipe dough into the prepared pan, filling each mold about two-thirds full. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for a few minutes before transferring to a wire rack.
  8. For fried donuts: Heat vegetable oil in a deep pot or Dutch oven to 365°F (185°C). Carefully drop spoonfuls of dough into the hot oil, frying in batches. Fry for 2-3 minutes per side, or until golden brown. Remove with a slotted spoon and drain on paper towels.
  9. While the donuts are still warm, melt the 1/2 cup butter in a small bowl. In another bowl, combine the 1/2 cup sugar and 1 teaspoon cinnamon.
