A simple recipe for baked oatmeal featuring the warm flavors of apple and cinnamon, perfect for a make-ahead breakfast.

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar, packed
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1 large egg, lightly beaten
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 large apple, peeled and diced
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking dish.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, salt, and brown sugar.
  3. In a separate bowl, whisk together the milk, egg, melted butter or oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the diced apple and any optional nuts.
  6. Pour the mixture evenly into the prepared baking dish.
  7. Bake for 30 to 35 minutes, or until the top is golden brown and the center is set.
  8. Let it cool for 5 minutes before cutting and serving.

Notes

  • For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes) and use non-dairy milk.
  • If you prefer gluten-free oatmeal, use certified gluten-free rolled oats.
  • You can prepare this dish the night before; cover the assembled, unbaked dish and refrigerate. Add 5-10 minutes to the baking time if baking straight from the refrigerator.
  • Serve warm with an extra drizzle of maple syrup or a dollop of yogurt.
