1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup plain yogurt or sour cream
2 medium apples, peeled, cored, and diced (about 1 1/2 cups)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or an 8×8 inch square pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this dry mixture aside.
In a large bowl, use an electric mixer to beat the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Add half of the dry ingredient mixture to the wet ingredients and mix on low speed until just combined.
Mix in the yogurt or sour cream until smooth.
Add the remaining dry ingredients and mix only until no streaks of flour remain. Do not overmix.
Gently fold in the diced apples using a spatula.
Pour the batter into your prepared pan and spread evenly.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes before turning it out onto a wire rack to cool completely.
Notes
For extra moisture, toss the diced apples with 1 tablespoon of the flour mixture before folding them into the batter.
