  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup sour cream or plain yogurt
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced (about 1 1/2 cups)
  • 1/2 cup all-purpose flour (for topping)
  • 1/4 cup packed brown sugar (for topping)
  • 1/4 cup rolled oats (for topping)
  • 1/4 teaspoon ground cinnamon (for topping)
  • 3 tablespoons cold unsalted butter, cut into small pieces (for topping)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, 1 teaspoon cinnamon, and nutmeg for the cake batter. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg, then mix in the sour cream and vanilla extract until just combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  5. Gently fold in the diced apples. Pour the batter into the prepared cake pan and spread evenly.
  6. Prepare the topping: In a small bowl, combine the 1/2 cup flour, brown sugar, oats, and 1/4 teaspoon cinnamon for the topping.
  7. Cut in the 3 tablespoons of cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  8. Sprinkle the oat topping evenly over the cake batter.
  9. Bake for 40 to 45 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan on a wire rack for 15 minutes before inverting it onto the rack to cool completely.

Notes

  • You can substitute walnuts or pecans for half of the oats in the topping for added crunch.
  • For a stronger apple flavor, toss the diced apples with 1 teaspoon of lemon juice before folding them into the batter.
  • This cake keeps well covered at room temperature for up to three days.
