Bake this simple, moist apple fritter bread featuring tender apple pieces, a warm cinnamon swirl, and a sweet vanilla glaze. This quick bread captures the flavor of a classic fritter in an easy loaf format.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups peeled, chopped apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon (for swirl)
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, 1 teaspoon cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing just until combined. Do not overmix.
  5. Gently fold in the chopped apples.
  6. In a small bowl, mix the brown sugar and the second teaspoon of cinnamon to create the swirl mixture.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar mixture evenly over the batter. Top with the remaining batter. Use a knife to gently swirl the mixture through the batter a few times.
  8. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the bread cools, whisk together the powdered sugar, 1 tablespoon milk, and 1/2 teaspoon vanilla extract to make the glaze. Drizzle the glaze over the cooled bread before slicing and serving.

Notes

  • Use firm, slightly tart apples for the best texture and flavor contrast.
  • You can prepare the batter and the swirl mixture a day ahead; store covered in the refrigerator.
  • For a bakery style look, sprinkle coarse sugar over the top before baking.
