Bake soft, moist muffins featuring chunks of apple and cinnamon spice, topped with a simple oat streusel. These are good for quick breakfasts or packing in lunchboxes.

  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh apple (peeled or unpeeled)
  • For Streusel: 1/4 cup all-purpose flour
  • For Streusel: 1/4 cup rolled oats
  • For Streusel: 2 tablespoons granulated sugar
  • For Streusel: 1/4 teaspoon ground cinnamon
  • For Streusel: 2 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, 1 cup oats, baking soda, 1 teaspoon cinnamon, and salt.
  3. In a separate medium bowl, whisk the melted butter and brown sugar until combined. Beat in the eggs one at a time. Stir in the milk, applesauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. Gently fold in the diced apple.
  5. Prepare the streusel: In a small bowl, combine the streusel flour, 1/4 cup oats, granulated sugar, and 1/4 teaspoon cinnamon. Cut in the cold butter using your fingers or a pastry blender until coarse crumbs form.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full. Sprinkle the streusel topping over the batter in each cup.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For best texture, use firm apples like Honeycrisp or Granny Smith.
  • You can make these ahead and freeze them. Cool completely, then place them in a freezer-safe bag or container for up to three months. Thaw overnight on the counter or reheat briefly in the microwave.
  • If you prefer a less sweet topping, reduce the streusel sugar to 1 tablespoon.
