  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup finely diced peeled apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/4 teaspoon ground cinnamon (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, 1 teaspoon cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in the finely diced apples by hand.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10 to 12 minutes, or until the edges are lightly golden. The centers should still look soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  10. While the cookies cool, prepare the glaze: Whisk together the powdered sugar, milk, and 1/4 teaspoon cinnamon until smooth.
  11. Drizzle the cinnamon glaze over the cooled cookies. Let the glaze set before serving.

  • Use firm, tart apples like Granny Smith for the best texture in the cookie.
  • For a stronger apple flavor, you can briefly sauté the diced apples in a teaspoon of butter for 3 minutes before folding them into the dough.
