Easy Baked Apple Fritters

A simple recipe for making light and fluffy apple fritters using your oven instead of deep frying.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup peeled, cored, and diced apples (about 1 large apple)
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
  5. Fold in the diced apples until they are evenly distributed throughout the batter.
  6. Drop rounded tablespoons of batter onto the prepared baking sheet, spacing them about 2 inches apart. You should get about 12 fritters.
  7. Bake for 12 to 15 minutes, or until the tops are lightly golden brown and a toothpick inserted into the center comes out clean.
  8. While the fritters cool slightly, prepare the glaze. Whisk together the powdered sugar, 2 tablespoons of milk, and 1/4 teaspoon of vanilla extract until smooth. Add more milk, a teaspoon at a time, if the glaze is too thick.
  9. Dip the tops of the warm fritters into the glaze or drizzle the glaze over them. Let the glaze set before serving.

Notes

  • Use firm, tart apples like Granny Smith for the best texture and flavor contrast.
  • For a crispier exterior, lightly spray the tops of the batter mounds with cooking spray before baking.
  • You can substitute half of the all-purpose flour with whole wheat flour for a slightly heartier fritter.
