  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled, cored, and diced apples (about 2 medium apples)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a large baking sheet or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In a separate medium bowl, whisk the granulated sugar, egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix the batter.
  5. Fold in the diced apples gently.
  6. Drop rounded tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart. You should get about 12 fritters.
  7. Bake for 12 to 15 minutes, or until the edges are lightly golden brown and the centers are set.
  8. While the fritters cool slightly, whisk together the powdered sugar and 2 tablespoons of milk to create a thin glaze.
  9. Drizzle the glaze over the warm fritters before serving.

Notes

  • For a crispier exterior, you can lightly spray the tops of the fritters with cooking spray before baking.
  • Use firm, tart apples like Granny Smith for the best texture in the baked product.
  • If you prefer a stronger cinnamon flavor, add an extra 1/2 teaspoon of cinnamon to the batter.
