A recipe for cake-style apple fritters baked in the oven instead of deep-fried.

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled, cored, and diced apples (about 2 medium apples)
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a standard muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate medium bowl, whisk the granulated sugar, egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix the batter.
  5. Fold in the diced apples until they are evenly distributed throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the fritters cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the fritters cool, prepare the glaze by whisking the powdered sugar and 1 tablespoon of milk until smooth. Add more milk, a few drops at a time, if needed to reach a drizzling consistency.
  10. Drizzle the glaze over the cooled fritters before serving.

Notes

  • Use firm, tart apples like Granny Smith for the best texture and flavor contrast.
  • You can mix 1/2 teaspoon of apple pie spice instead of separate cinnamon and nutmeg.
  • These fritters store well in an airtight container at room temperature for up to 3 days.
