1 block (7-8 oz) feta cheese
1 can (15 oz) chickpeas, rinsed and drained
1 pint cherry tomatoes
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 400°F (200°C).
Place the block of feta cheese in the center of a small baking dish.
Scatter the rinsed and drained chickpeas around the feta.
Add the cherry tomatoes to the dish.
Drizzle everything with olive oil.
Sprinkle with dried oregano, garlic powder, and red pepper flakes (if using).
Season with salt and pepper.
Bake for 20-25 minutes, or until the tomatoes are softened and beginning to burst, and the feta is warm and slightly melty.
Gently stir everything together in the baking dish.
Serve warm, garnished with fresh parsley.
Notes
You can add other vegetables like sliced red onion or bell peppers along with the tomatoes.
For a creamier texture, mash some of the feta and tomatoes with a fork before serving.
