  • 1 (16 ounce) package pasta
  • 2 pints cherry or grape tomatoes
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8 ounce) block feta cheese
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh basil, plus more for garnish
  • 1/4 cup chopped fresh parsley, plus more for garnish

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. While the oven heats, cook your pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  3. In a 9×13 inch baking dish, combine the tomatoes, olive oil, salt, and pepper.
  4. Place the block of feta cheese in the center of the baking dish, surrounded by the tomatoes.
  5. Bake for 30-35 minutes, or until the feta is soft and the tomatoes have burst.
  6. Remove the dish from the oven. Mash the feta and tomatoes together with a fork until a creamy sauce forms.
  7. Add the minced garlic and stir to combine.
  8. Add the drained pasta to the baking dish along with the chopped basil and parsley.
  9. Toss everything together until the pasta is well coated in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  10. Serve immediately, garnished with extra basil and parsley.
