Prepare this make-ahead French toast casserole the night before for an easy, crowd-pleasing brunch the next morning. It features a custardy interior and a crisp cinnamon streusel topping.

  • 1 loaf (1 pound) day-old bread, cut into 1-inch cubes (Brioche or Challah work well)
  • 12 large eggs
  • 3 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Grease a 9×13 inch baking dish. Arrange the bread cubes evenly in the prepared dish.
  2. In a large bowl, whisk together the eggs, milk, heavy cream, 3/4 cup granulated sugar, 2 teaspoons cinnamon, vanilla extract, and salt until fully combined.
  3. Pour the egg mixture evenly over the bread cubes. Gently press the bread down to ensure all pieces absorb the custard.
  4. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  5. About 30 minutes before baking, prepare the streusel topping. In a medium bowl, combine the flour, brown sugar, 1/4 cup granulated sugar, and 1 teaspoon cinnamon. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  6. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap from the casserole.
  7. Sprinkle the streusel topping evenly over the soaked bread.
  8. Bake for 45 to 55 minutes, or until the casserole is puffed, golden brown, and a knife inserted near the center comes out mostly clean.
  9. Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • Using day-old or slightly stale bread prevents the casserole from becoming soggy.
  • You can substitute half-and-half for the heavy cream if you prefer a slightly lighter custard.
  • Serve warm with maple syrup or powdered sugar, if desired.
