5 lbs Russet potatoes, scrubbed
1 cup milk
1/2 cup sour cream
1/2 cup (1 stick) unsalted butter, melted
1 1/2 cups shredded sharp cheddar cheese, divided
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cooked, crumbled bacon
4 green onions, sliced
1/2 cup shredded Monterey Jack cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
Prick the potatoes several times with a fork. Bake directly on the oven rack for 60 to 75 minutes, or until easily pierced with a fork.
Let the potatoes cool slightly until you can handle them. Cut them in half lengthwise and scoop the flesh into a large bowl, leaving a small border of potato in the skins. Discard the skins.
Add the milk, sour cream, melted butter, 1 cup of the cheddar cheese, salt, and pepper to the potato flesh. Mash until smooth and creamy.
Fold in the crumbled bacon and most of the sliced green onions, reserving some for topping.
Spread the potato mixture evenly into the prepared baking dish.
Sprinkle the remaining 1/2 cup cheddar cheese and the Monterey Jack cheese over the top.
Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
Garnish with the reserved green onions before serving.
Notes
You can prepare this casserole up to the point of baking, cover it, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if cooking directly from the refrigerator.
For a richer flavor, use heavy cream instead of milk.
If you prefer a crispier top, place the dish under the broiler for the last 1-2 minutes, watching closely to prevent burning.
