Smoked Paprika and Bacon Baked Potato Salad

This recipe uses oven-roasted potato cubes for a smoky flavor and slightly crisp texture in your potato salad.

  • 3 lbs russet potatoes, scrubbed and cubed (about 1 inch)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices bacon, cooked and crumbled
  • 1 cup celery, chopped
  • 1/2 cup red onion, finely chopped
  • 4 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the cubed potatoes with olive oil, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  4. Bake for 25 to 30 minutes, turning them halfway through, until the potatoes are tender inside and lightly browned on the edges. Let the potatoes cool slightly.
  5. While the potatoes cool, prepare the dressing base: In a medium bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, and sugar until smooth.
  6. In a large mixing bowl, combine the slightly cooled baked potatoes, crumbled bacon, celery, red onion, and chopped hard-boiled eggs.
  7. Pour the dressing mixture over the potato mixture. Gently fold everything together until the ingredients are coated. Do not overmix.
  8. Stir in the fresh parsley.
  9. Chill the salad for at least 2 hours before serving to allow the flavors to combine.

Notes

  • For a crispier texture, you can increase the oven temperature to 425°F and reduce the baking time slightly.
  • You can prepare the potatoes and cook the bacon up to one day ahead. Store them separately and combine just before mixing with the dressing.
  • If you prefer a warm potato salad, serve it within 30 minutes of mixing the dressing.
