2 large sweet potatoes
1 tablespoon olive oil
Salt and black pepper to taste
1 cup fresh spinach, finely chopped
1/2 cup ricotta cheese, whole milk preferred
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1/4 teaspoon nutmeg
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
1 tablespoon olive oil (for drizzle)
2 tablespoons fresh basil leaves, chopped
1 tablespoon lemon juice
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Pierce the sweet potatoes several times with a fork.
Rub the sweet potatoes lightly with 1 tablespoon of olive oil and season with salt and pepper.
Bake the sweet potatoes directly on the oven rack for 45 to 60 minutes, or until they are tender when squeezed.
While the potatoes bake, prepare the filling. In a medium bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, minced garlic, and nutmeg. Mix until well combined and creamy. Season with salt and pepper.
Prepare the herb drizzle. In a small bowl, whisk together 1 tablespoon of olive oil, chopped parsley, chopped chives, chopped basil, and lemon juice. Season lightly with salt.
Once the sweet potatoes are cooked, carefully slice them open lengthwise, being careful not to cut all the way through. Gently fluff the inside flesh with a fork.
Spoon the creamy spinach ricotta filling generously into the center of each sweet potato.
Drizzle the herb mixture over the filling before serving immediately.
Notes
For a smoother filling, you can briefly pulse the spinach in a food processor before mixing it with the ricotta.
If you prefer a softer potato skin, wrap the potatoes in foil before baking.
You can bake extra potatoes ahead of time and reheat them before stuffing.
