Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Trim the ends of the zucchinis. Cut each zucchini in half crosswise, then cut each half lengthwise into fry-like sticks.
  3. Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, paprika, salt, and pepper.
  4. Dip each zucchini stick first into the flour, shaking off any excess.
  5. Next, dip it into the beaten eggs, letting any excess drip off.
  6. Finally, coat it thoroughly with the panko mixture, pressing gently to help the crumbs adhere.
  7. Place the coated zucchini sticks in a single layer on the prepared baking sheet.
  8. Bake for 18-20 minutes, flipping halfway through, until golden brown and crispy.
