This recipe creates a hybrid dessert combining the moist flavor of banana bread with the dense, fudgy texture of brownies. It uses overripe bananas for maximum flavor.

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 3/4 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed very ripe bananas (about 3 medium)
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips, divided

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.
  4. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
  6. Fold in 3/4 cup of the chocolate chips.
  7. Spread the batter evenly into the prepared baking pan. Sprinkle the remaining 1/4 cup of chocolate chips over the top.
  8. Bake for 30 to 35 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist, fudgy crumbs attached, not wet batter.
  9. Let the brownies cool completely in the pan on a wire rack before lifting out using the parchment overhang and cutting into squares.

Notes

  • For a fudgier texture, slightly underbake by 2-3 minutes. For a more cake-like texture, bake closer to 35 minutes.
  • Use bananas that are heavily spotted or black for the best moisture and sweetness.
  • Substitute 1/2 cup of the flour with almond flour for a slightly denser, moister result.
  • For a swirl effect, reserve 1/2 cup of cream cheese mixed with 1 tablespoon sugar and dollop over the batter before baking, then swirl gently with a knife.
