Follow this recipe to make moist and fluffy banana chocolate chip muffins from scratch. This method ensures a tender crumb.

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/2 cup milk
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set this dry mixture aside.
  3. In a large bowl, cream the softened butter and sugar together with an electric mixer until light and fluffy, about 2 minutes.
  4. Beat in the egg and vanilla extract until just combined.
  5. Stir in the mashed bananas until they are incorporated into the wet mixture.
  6. Pour in the milk and mix on low speed until just blended. Do not overmix.
  7. Gradually add the dry ingredients to the wet ingredients. Mix on low speed only until the flour streaks almost disappear. A few small lumps are fine. Overmixing develops gluten and makes muffins tough.
  8. Gently fold in the chocolate chips using a spatula.
  9. Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full.
  10. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use very ripe bananas (brown spots are best) for the sweetest flavor and moistest texture.
  • Mash the bananas with a fork until mostly smooth, leaving a few small lumps for texture.
  • To prevent dense muffins, mix the wet and dry ingredients only until they are just combined. Stop mixing as soon as you no longer see dry flour.
  • For bakery-style tops, fill the cups slightly fuller and bake at 400 degrees Fahrenheit for the first 5 minutes, then reduce the temperature to 375 degrees Fahrenheit for the remaining bake time.
