These easy banana oat pancakes are naturally gluten-free and require no flour. They’re fluffy, delicious, and perfect for a quick breakfast or brunch.

Ingredients

  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon (optional)
  • Pinch of salt
  • Oil or butter for cooking

Instructions

  1. In a bowl, mash the ripe bananas until smooth.
  2. Add the eggs to the mashed bananas and whisk until well combined.
  3. Stir in the rolled oats, baking powder, cinnamon (if using), and salt. Mix until just combined. Do not overmix.
  4. Heat a lightly oiled or buttered griddle or frying pan over medium heat.
  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
