1 cup mashed ripe bananas (about 2-3 medium bananas)
1/2 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 cup chopped walnuts, plus more for topping
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, mash the ripe bananas until smooth. Add the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Whisk until well combined.
Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.
Gently fold in the chopped walnuts.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Sprinkle a few extra chopped walnuts on top of each muffin for added texture.
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
