Follow this recipe to make flavorful chicken skewers coated in a spicy, creamy Bang Bang sauce, perfect for grilling or air frying.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 wooden or metal skewers (if using wooden, soak them for 30 minutes)
  • 1 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to your spice preference)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Prepare the chicken: In a bowl, toss the cubed chicken with olive oil, smoked paprika, garlic powder, salt, and pepper. Thread the seasoned chicken pieces onto the prepared skewers, leaving a small space between pieces.
  2. Make the Bang Bang sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and grated ginger until completely smooth. Set aside about 1/4 cup of the sauce for brushing during cooking, and reserve the rest for serving.
  3. Cook the skewers: Preheat your grill to medium-high heat or set your air fryer to 380°F (195°C).
  4. If grilling: Lightly oil the grates. Place the skewers on the grill and cook for 4-5 minutes per side. Brush lightly with the reserved sauce during the last few minutes of cooking.
  5. If air frying: Place the skewers in a single layer in the air fryer basket, working in batches if necessary. Cook for 10-12 minutes, flipping halfway through. Brush lightly with the reserved sauce during the last 2 minutes of cooking.
  6. Check the internal temperature of the chicken; it should reach 165°F (74°C).
  7. Remove the skewers from the heat. Garnish with fresh cilantro and serve immediately with the remaining Bang Bang sauce on the side for dipping.

Notes

  • For extra char, you can briefly broil the skewers for 1-2 minutes after grilling or air frying.
  • If you prefer a baked version, place the skewers on a foil-lined baking sheet and bake at 400°F (200°C) for 15-20 minutes, turning halfway.
  • You can substitute chicken thighs for breasts if you prefer juicier meat.
