1 pound large shrimp, peeled and deveined
1/2 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
2 large eggs, beaten
1 cup panko breadcrumbs
Vegetable oil, for frying
For the Bang Bang Sauce:
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha (or to taste)
1 teaspoon honey
1/2 teaspoon lime juice
Instructions
In a shallow dish, whisk together the flour, cornstarch, salt, pepper, and paprika.
In another shallow dish, place the beaten eggs.
In a third shallow dish, place the panko breadcrumbs.
Pat the shrimp dry with paper towels.
Dredge each shrimp first in the flour mixture, then dip into the eggs, and finally coat thoroughly with panko breadcrumbs.
Heat about 2 inches of vegetable oil in a large skillet or Dutch oven to 375°F (190°C).
Fry the shrimp in batches, being careful not to overcrowd the pan, for 2-3 minutes per side, until golden brown and cooked through.
Remove the shrimp with a slotted spoon and place on a wire rack to drain.
While the shrimp are frying, prepare the sauce. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth and well combined.
Once the shrimp are fried and slightly cooled, toss them gently in the Bang Bang sauce until evenly coated.
Serve immediately as an appetizer or use as a filling for tacos.
Notes
For an extra kick, add more sriracha to the sauce.
Ensure the oil is at the correct temperature for crispy shrimp.
You can adjust the sweetness and spice level of the sauce to your preference.
