  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup sliced mushrooms
  • 2 tablespoons chopped green onions
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • 12 spring roll wrappers
  • Vegetable oil for frying
  • For the Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to your heat preference)
  • 1 teaspoon rice vinegar

Instructions

  1. In a bowl, combine the shredded cabbage, carrots, mushrooms, and green onions.
  2. Add the soy sauce, sesame oil, and ground ginger to the vegetables. Mix well to coat everything evenly. This is your filling.
  3. Lay one spring roll wrapper flat on your work surface, positioning it like a diamond.
  4. Place about two tablespoons of the vegetable filling near the bottom corner closest to you.
  5. Fold the bottom corner up over the filling. Fold in the left and right corners toward the center.
  6. Roll the wrapper tightly upward toward the top corner. Moisten the top edge with a little water to seal the roll completely. Repeat with the remaining wrappers and filling.
  7. Pour vegetable oil into a deep pan or pot to a depth of about 2 inches. Heat the oil to 350°F (175°C).
  8. Carefully place the spring rolls into the hot oil, working in batches so you do not overcrowd the pan.
  9. Fry for 3 to 4 minutes, turning occasionally, until they are golden brown and crisp.
  10. Remove the spring rolls with a slotted spoon and place them on a wire rack or paper towel-lined plate to drain excess oil.
  11. To make the sauce, whisk together the mayonnaise, sweet chili sauce, sriracha, and rice vinegar in a small bowl until smooth.
  12. Serve the hot spring rolls immediately with the Bang Bang sauce for dipping.

Notes

  • Chef Tariq suggests using very finely julienned vegetables for the best texture inside the roll.
  • Make sure your oil temperature is correct; too cool and the rolls get greasy, too hot and they burn before cooking through.
