1.5 pounds ground beef (80/20 recommended)
1/2 cup breadcrumbs
1/4 cup milk
1 large egg, lightly beaten
1/4 cup finely chopped onion
2 tablespoons ketchup, plus more for topping
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup BBQ sauce, plus more for topping
Instructions
Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with silicone muffin liners.
In a large bowl, gently mix together the ground beef, breadcrumbs, milk, egg, chopped onion, 2 tablespoons of ketchup, Worcestershire sauce, salt, and pepper. Be careful not to overmix.
Stir in the 1/4 cup of BBQ sauce until just combined.
Divide the meatloaf mixture evenly among the prepared muffin cups, pressing gently into each cup.
Top each muffin with a little extra ketchup and BBQ sauce.
Bake for 20-25 minutes, or until the internal temperature reaches 160°F (71°C) and the muffins are cooked through.
Let the meatloaf muffins cool in the tin for a few minutes before carefully removing them.
Serve warm or let cool completely before storing.
Notes
For a different flavor, you can add a pinch of garlic powder or onion powder to the meat mixture.
These muffins freeze well. Once cooled, wrap them individually in plastic wrap and then in aluminum foil or place them in a freezer-safe bag. Reheat in the oven or microwave.
