Follow this simple recipe to make authentic Brussels-style Belgian waffles with a crisp exterior and a light, fluffy interior.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 2 large eggs, separated
  • 1 1/2 cups milk

  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk the egg yolks, milk, vegetable oil, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are acceptable.
  4. In a clean bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the batter in two additions until no white streaks remain. This step creates the fluffy texture.
  6. Preheat your waffle iron according to the manufacturer’s directions. Lightly grease the plates if necessary.
  7. Pour the batter onto the hot waffle iron, filling the center without overflowing.
  8. Cook according to your waffle iron’s instructions until the waffles are golden brown and crisp, usually 4 to 6 minutes.
  9. Remove the waffles and serve immediately with your preferred toppings.

Notes

  • For the best crispness, avoid stacking the finished waffles directly on top of each other; place them on a wire rack in a single layer while you finish cooking the rest.
  • You can prepare the batter ahead of time, but do not fold in the egg whites until just before cooking.
  • If you do not have baking powder and baking soda, you can substitute with 1 teaspoon of baking powder and omit the baking soda, though the rise may be slightly less pronounced.
