Make this colorful dessert pizza using a soft sugar cookie crust, a sweet cream cheese spread, and a topping of fresh seasonal berries.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 4 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup apricot jam or apple jelly
  • 1 tablespoon water

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 12-inch pizza pan or line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft dough.
  4. Press the dough evenly onto the prepared pizza pan, forming a slight rim around the edge.
  5. Bake for 15 to 18 minutes, or until the edges are lightly golden brown. Let the crust cool completely on the pan.
  6. While the crust cools, prepare the spread. Beat the softened cream cheese, powdered sugar, lemon zest, and lemon juice until smooth and creamy.
  7. Once the crust is fully cool, spread the cream cheese mixture evenly over the surface, leaving a small border.
  8. Arrange the mixed berries decoratively over the cream cheese layer.
  9. Prepare the glaze: In a small saucepan, heat the apricot jam or jelly with the water over low heat until melted and smooth. Strain the mixture if necessary to remove large pieces.
  10. Brush the warm glaze lightly over the arranged fruit to give it shine and help preserve it.
  11. Chill the fruit pizza for at least 30 minutes before slicing and serving.

Notes

  • For a firmer crust, you can chill the dough for 30 minutes before pressing it onto the pan.
  • If you do not have apricot jam, use seedless raspberry jam or a clear piping gel for glazing.
  • Cut the pizza into wedges using a sharp knife just before serving.
