  • 1 cup fresh or frozen mixed berries (strawberries, raspberries, blueberries)
  • 2 tablespoons dried hibiscus flowers
  • 4 cups boiling water
  • 1 cup cold water
  • Sweetener to taste (e.g., honey, simple syrup, or stevia)
  • Chilled sparkling water or club soda
  • Ice cubes
  • Fresh mint or lime slices for garnish (optional)

Instructions

  1. Place the mixed berries and dried hibiscus flowers in a heatproof pitcher or bowl.
  2. Pour the 4 cups of boiling water over the berries and hibiscus.
  3. Allow this mixture to steep for 15 to 20 minutes until the liquid is a deep, rich red color.
  4. Strain the liquid through a fine-mesh sieve into a clean container, pressing gently on the solids to extract all the flavor. Discard the solids.
  5. Stir in 1 cup of cold water and your chosen sweetener until it dissolves completely. Taste and adjust sweetness if needed.
  6. Chill the hibiscus berry concentrate in the refrigerator for at least 1 hour until very cold.
  7. To serve, fill glasses with ice. Pour about one-third full with the chilled concentrate.
  8. Top the rest of the glass with chilled sparkling water or club soda. Stir gently.
  9. Garnish with fresh mint or lime slices before you serve your fizzy water.
