Ingredients

Scale
  • 6 large eggs
  • 1/2 cup mayonnaise (full fat recommended for creaminess)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon yellow mustard
  • 1 tablespoon sweet pickle relish (drained)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh lemon juice
  • Optional: 1 stalk celery, finely minced (for crunch)

Instructions

  1. Place eggs in a saucepan and cover with cold water. Bring the water to a full boil over high heat.
  2. Once boiling, immediately remove the pan from the heat, cover it, and let the eggs stand for exactly 12 minutes.
  3. Prepare an ice bath by filling a large bowl with ice and cold water.
  4. Transfer the cooked eggs directly into the ice bath to stop the cooking process. Let them cool completely, about 10 minutes.
  5. Peel the cooled eggs.
  6. Roughly chop the eggs or mash them with a fork to your desired consistency. For a creamy salad, chop finer.
  7. In a medium bowl, combine the chopped eggs, mayonnaise, Dijon mustard, yellow mustard, relish, salt, pepper, and lemon juice.
  8. If using celery, add it now.
  9. Gently fold all ingredients together until just combined. Avoid overmixing, which can make the salad gummy.
  10. Taste and adjust seasoning if needed. Add a pinch more salt or lemon juice for brightness.
  11. Serve immediately or chill for at least 30 minutes to allow flavors to meld.

Notes
