You can make the creamiest, restaurant-quality Alfredo sauce right at home in under 15 minutes. This classic recipe uses simple ingredients for a rich, velvety sauce that tastes far better than anything store-bought. It is foolproof and quick for your next pasta night.

Ingredients

Scale
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, freshly ground

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the minced garlic and cook for about one minute until fragrant. Do not let the garlic brown.
  3. Pour in the heavy cream. Bring the cream to a gentle simmer, stirring often. Reduce the heat to low.
  4. Gradually whisk in the grated Parmesan cheese, a little at a time, until the cheese melts completely and the sauce thickens slightly. Stir constantly to prevent clumping.
  5. Remove the pan from the heat. Stir in the salt and pepper.
  6. Toss immediately with hot, cooked pasta, adding a splash of pasta water if needed to reach your desired consistency. Serve right away with extra Parmesan.

Notes

  • Always use freshly grated Parmesan cheese for the best melt and flavor. Pre-grated cheese contains anti-caking agents that make the sauce grainy.
  • If the sauce seems too thick after adding the cheese, slowly whisk in a tablespoon or two of the hot pasta cooking water until you achieve a silky texture.
  • This sauce is best made just before serving; it thickens considerably as it cools.
