Follow these instructions to make moist, flavorful apple fritters using the oven instead of deep frying.

  • 1/4 teaspoon ground nutmeg

  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled, cored, and diced apples (about 2 medium apples)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a standard 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk the granulated sugar and egg until combined. Whisk in the melted butter, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are acceptable.
  5. Fold in the diced apples until they are evenly distributed throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the fritters cool slightly, prepare the glaze by whisking together the powdered sugar, 2 tablespoons of milk, and 1/4 teaspoon of vanilla extract until smooth. Add more milk, a half teaspoon at a time, if the glaze is too thick.
  9. Remove the fritters from the tin and place them on a wire rack. Drizzle the glaze over the warm fritters. Serve warm or at room temperature.

Notes

  • Use firm, tart apples like Granny Smith for the best texture and flavor contrast.
  • For a slightly crispier edge, you can lightly spray the tops of the batter with cooking spray before baking.
  • If you prefer a thicker glaze, use less milk. If you prefer a thinner glaze, add a few more drops of milk.
