This recipe delivers the BEST soft and chewy classic Snickerdoodles, coated perfectly in a rich cinnamon-sugar crust. Follow these steps for that nostalgic, comforting cookie experience every time.

Ingredients

  • All-Purpose Flour: 2 1/4 cups
  • Baking Soda: 2 teaspoons
  • Cream of Tartar: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Unsalted Butter, softened: 1 cup (2 sticks)
  • Granulated Sugar: 1 1/2 cups
  • Eggs, large: 2
  • Vanilla Extract: 1 teaspoon
  • For Coating: 1/4 cup Granulated Sugar
  • For Coating: 2 tablespoons Ground Cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt. Set this aside.
  3. In a large bowl, beat the softened butter and 1 1/2 cups sugar until the mixture is light and fluffy. This step adds air for a softer cookie.
  4. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  6. In a small, shallow bowl, mix the coating sugar and cinnamon thoroughly.
  7. Roll the dough into balls, about 1.5 tablespoons each. For the best coating, roll each ball first in the cinnamon-sugar mixture, then roll it again for a thick layer.
  8. Place the coated balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 8 to 10 minutes. The edges should be set, but the centers should still look slightly soft. They will firm up as they cool.
  10. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • Chef Tariq suggests using fresh cream of tartar for the best tang and lift.
  • For extra chewiness, slightly underbake the cookies.
  • Amara recommends using high-quality ground cinnamon for the coating.
  • Leo likes to chill the dough for 30 minutes before rolling for thicker cookies.
