You can make incredibly soft and gooey homemade cinnamon buns with a simple, one-rise dough and a rich cream cheese frosting. This recipe delivers the classic, indulgent flavor you love, ready faster than you expect.

Ingredients

  • All-purpose flour: 3 cups
  • Granulated sugar: 1/2 cup (for dough)
  • Active dry yeast: 2 1/4 teaspoons
  • Salt: 1 teaspoon
  • Whole milk: 1 cup, warm
  • Unsalted butter: 1/2 cup, melted, plus 1/4 cup softened (for filling)
  • Large eggs: 2
  • Light brown sugar: 3/4 cup (for filling)
  • Ground cinnamon: 2 tablespoons (for filling)
  • Cream cheese: 8 ounces, softened (for frosting)
  • Powdered sugar: 2 cups (for frosting)
  • Vanilla extract: 1 teaspoon (for frosting)
  • Milk or heavy cream: 1-2 tablespoons (for frosting)

Instructions

  1. Activate the yeast by mixing it with warm milk and a pinch of sugar. Let it sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together the flour, remaining sugar, and salt.
  3. Add the melted butter and eggs to the yeast mixture. Pour the wet ingredients into the dry ingredients.
  4. Mix until a shaggy dough forms, then knead for about 5-7 minutes until the dough is smooth and elastic.
  5. Place the dough in a buttered bowl, cover it, and let it rise in a warm place for 60 minutes, or until doubled.
  6. While the dough rises, mix the brown sugar and cinnamon for the filling.
  7. Punch down the risen dough and roll it out on a lightly floured surface into a large rectangle (about 12×18 inches).
  8. Spread the 1/4 cup softened butter evenly over the dough surface. Sprinkle the cinnamon-sugar mixture over the butter.
  9. Roll the dough tightly from the long side into a log. Cut the log into 12 even rolls.
  10. Place the rolls in a greased 9×13 inch baking pan. Cover and let them rest for a final 15 minutes (this is the ‘one rise’ method).
  11. Preheat your oven to 375 degrees F (190 degrees C).
  12. Bake for 20-25 minutes until golden brown.
  13. While baking, prepare the frosting by beating the cream cheese until smooth, then gradually adding the powdered sugar, vanilla, and milk until you reach a thick, spreadable consistency.
  14. Remove the buns from the oven and immediately spread the cream cheese frosting generously over the warm rolls. Serve warm.

Notes

  • For the softest texture, ensure your milk is warm, not hot, to properly activate the yeast.
  • Do not overbake the rolls; they continue to cook slightly after you remove them from the oven.
  • If you prefer a gooier center, slightly increase the butter or brown sugar in the filling.
  • This recipe works well when the dough is slightly sticky; resist adding too much extra flour during kneading.
