Make flavorful, hearty black bean burgers that hold their shape perfectly. This recipe uses simple techniques to achieve a juicy interior and a firm texture, ideal for grilling or pan-frying.

  • 1 (15-ounce) can black beans, rinsed and thoroughly dried
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg (or flax egg for vegan)
  • 1 tablespoon olive oil, plus more for cooking
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chipotle powder (adjust for spice preference)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the rinsed and dried black beans on a baking sheet lined with paper towels. Pat them very dry. This step prevents mushiness.
  2. In a large bowl, mash about two-thirds of the beans with a fork until mostly smooth, leaving some texture.
  3. In a small skillet, heat 1 teaspoon of olive oil over medium heat. Sauté the chopped onion until soft, about 4 minutes. Add the minced garlic and cook for 1 minute more. Remove from heat.
  4. Add the sautéed onion and garlic mixture to the mashed beans.
  5. Stir in the breadcrumbs, egg, smoked paprika, cumin, chipotle powder, salt, and pepper. Mix until just combined. Do not overmix.
  6. Form the mixture into 4 equal patties, about 3/4 inch thick. If the mixture feels too wet, add 1 more tablespoon of breadcrumbs.
  7. Chill the patties in the refrigerator for at least 30 minutes. This helps them firm up before cooking.
  8. Heat 1 tablespoon of olive oil in a large skillet over medium heat, or preheat your grill to medium.
  9. Cook the patties for 5 to 7 minutes per side until they are heated through and have a nice crust. Avoid moving them until a crust forms.
  10. Serve immediately on your favorite bun with desired toppings.

Notes

  • For the best texture, ensure your beans are very dry before mashing. You can spread them on a baking sheet and bake at 300°F for 10 minutes to dry them out further.
  • These patties freeze well. Place cooked or uncooked patties on parchment paper, freeze until solid, then transfer to a freezer bag for up to 3 months.
  • If you prefer a gluten-free burger, use gluten-free breadcrumbs or rolled oats instead.
