  • 1 small onion, chopped
  • 2 cloves garlic, minced

  • 1 cup cooked, cubed butternut squash
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup vegetable broth
  • 8 corn tortillas
  • 1 1/2 cups enchilada sauce (red or green)
  • 1 cup shredded Monterey Jack or cheddar cheese (optional, omit for vegan)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  4. Stir in the cubed butternut squash and black beans. Pour in the vegetable broth. Simmer for 5 minutes, stirring gently so the squash mostly stays in chunks. Season with salt and pepper.
  5. Warm the corn tortillas briefly in a dry skillet or microwave to make them pliable.
  6. Dip each tortilla quickly into the enchilada sauce to lightly coat.
  7. Spoon a line of the bean and squash mixture down the center of each tortilla. Roll up the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
  8. Pour the remaining enchilada sauce evenly over the rolled enchiladas.
  9. If using cheese, sprinkle it over the top.
  10. Bake for 20-25 minutes, or until the sauce is bubbly and the cheese is melted.
  11. Let the enchiladas rest for 5 minutes before serving.
