1 tablespoon olive oil
1/2 cup diced onion
1 clove garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1/2 teaspoon cumin
1/4 teaspoon chili powder
1/4 cup vegetable broth or water
Salt and pepper to taste
2 large eggs
2 corn tortillas
1/2 cup salsa (your favorite kind)
1/4 cup crumbled cotija cheese or feta
2 tablespoons chopped fresh cilantro
1/4 avocado, sliced
Instructions
Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 3 minutes.
Add garlic and cook for 1 minute until fragrant.
Stir in black beans, cumin, and chili powder. Add the broth or water. Simmer for 5 minutes, stirring occasionally, until the liquid reduces slightly. Season with salt and pepper. Keep warm.
While the beans simmer, warm the corn tortillas in a dry skillet or microwave until soft.
In a separate small skillet, cook the eggs to your liking (fried or sunny-side up work well).
To assemble, place one tortilla in each bowl. Spoon half of the warm black bean mixture over the tortilla.
Carefully place one cooked egg on top of the beans.
Spoon salsa over the egg.
Top with crumbled cheese, fresh cilantro, and sliced avocado. Serve immediately.
Notes
Chef Tariq suggests warming the tortillas slightly to prevent them from cracking when you eat them.
