  • 1 cup fresh blackberries
  • 2 tablespoons dried culinary lavender buds
  • 1/2 cup fresh lemon juice (about 3-4 lemons)
  • 4 cups water
  • 1/4 cup granulated sugar (adjust to taste)
  • Ice for serving
  • Fresh lemon slices and extra blackberries for garnish

Instructions

  1. Combine the blackberries, lavender buds, sugar, and water in a saucepan.
  2. Bring the mixture to a gentle simmer over medium heat. Stir until the sugar dissolves completely.
  3. Once simmering, remove the pan from the heat.
  4. Cover the saucepan and let the infusion steep for 20 minutes. This allows the flavors to develop fully.
  5. Strain the liquid through a fine-mesh sieve into a pitcher, pressing gently on the solids to extract all the liquid. Discard the solids.
  6. Stir in the fresh lemon juice.
  7. Taste the infusion. Add more sugar if you prefer it sweeter, or more lemon juice for extra tartness.
  8. Chill the infusion in the refrigerator for at least 1 hour before serving.
  9. Serve over ice, garnished with fresh blackberries and lemon slices.

  • Use only culinary-grade lavender; other types may taste soapy.
  • For a stronger blackberry flavor, gently muddle a few fresh berries before adding them to the pitcher.
  • If you prefer a less sweet drink, start with only 2 tablespoons of sugar and adjust later.
  • This infusion tastes wonderful sparkling; substitute half the water with sparkling water after chilling.
