1 cup Blue Corn Masa Flour
1/2 teaspoon Salt
1/4 teaspoon Baking Powder
1/2 cup Hot Water (approximately)
Vegetable Oil for frying
Instructions
In a bowl, mix the blue corn masa flour, salt, and baking powder.
Slowly add the hot water, mixing until a soft, pliable dough forms. You may need a little more or less water.
Knead the dough for about 2 minutes until smooth. Cover and let it rest for 15 minutes.
Divide the dough into small balls.
Using a tortilla press or a rolling pin between two sheets of plastic, press each ball very thin into a circle or desired shape.
Cut the circles into wedges (about 6-8 wedges per circle).
Heat about 1 inch of vegetable oil in a deep skillet to 350°F (175°C).
Carefully fry the chips in batches, turning as needed, until they are crisp and bubbles subside, about 1-2 minutes per side.
Remove the chips with a slotted spoon and immediately place them on a wire rack lined with paper towels to drain excess oil.
Sprinkle with a little extra salt immediately after frying if desired.
Notes
Use high-quality blue corn masa flour for the best flavor and color.
Adjust frying oil temperature carefully; too low and the chips will be greasy, too high and they will burn before crisping.
These chips are best eaten the same day they are made.
