  • 1 ½ cups all-purpose flour
  • ¾ cup packed light brown sugar
  • ½ cup rolled oats
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup (1 ½ sticks) cold unsalted butter, cut into cubes
  • 1 pound cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, brown sugar, oats, cinnamon, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan to form the crust.
  5. In a separate bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  6. Beat in the eggs one at a time, then stir in the vanilla extract until just combined.
  7. Pour the cheesecake filling over the crust in the baking pan.
  8. Scatter the blueberries evenly over the cheesecake filling.
  9. Sprinkle the remaining crumble mixture over the blueberries.
  10. Bake for 35-45 minutes, or until the edges are set and the center is mostly set but still slightly jiggly.
  11. Let the bars cool completely in the pan on a wire rack.
  12. Once cooled, lift the bars out of the pan using the parchment paper overhang. Cut into squares and serve.

Notes

  • For frozen blueberries, do not thaw before adding to the bars.
  • You can add a pinch of nutmeg to the crumble mixture for extra flavor.
  • Chill the bars for at least 30 minutes before cutting for cleaner slices.
