  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon lemon zest
  • 1/4 cup fresh lemon juice
  • 2 large eggs
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup fresh or frozen blueberries
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang.
  2. For the crust, combine the 1 cup flour, cold butter, 1/4 cup sugar, and salt in a bowl. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden.
  4. While the crust bakes, prepare the filling. Whisk together the remaining 1 cup sugar, remaining 1/4 cup flour, lemon zest, lemon juice, and eggs until smooth.
  5. Gently stir in the fresh thyme leaves and blueberries into the lemon mixture.
  6. Pour the filling evenly over the warm baked crust.
  7. Bake for 20 to 25 minutes, or until the center is just set and the edges are lightly golden.
  8. Let the bars cool completely on a wire rack before lifting them out using the parchment overhang.
  9. Once cool, cut into squares. Dust generously with powdered sugar before serving.

  • Use fresh thyme for the best aromatic flavor.
  • If using frozen blueberries, do not thaw them before adding them to the batter.
  • For cleaner cuts, chill the bars for at least one hour before slicing.
