Make a rich, classic Bolognese sauce slow-simmered for deep flavor. This recipe honors tradition while offering simple steps you can follow. It tastes even better the next day, making it perfect for leftovers.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry red wine
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup beef broth
  • 1/2 cup whole milk
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.
  3. Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 8 minutes.
  4. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Pour in the red wine. Let it bubble and reduce by half, scraping up any browned bits from the bottom.
  6. Stir in the crushed tomatoes, beef broth, milk, and bay leaf. Season with salt and pepper.
  7. Bring the sauce to a gentle simmer. Reduce heat to low, cover partially, and cook slowly for at least 2 hours, stirring occasionally. The longer it simmers, the better the flavor.
  8. Remove the bay leaf before serving. Adjust seasoning if needed.

Notes

  • For a quicker weeknight version, simmer for a minimum of 45 minutes.
  • This sauce freezes beautifully. Cool completely before transferring to freezer-safe containers.
  • Serve over your favorite pasta, like tagliatelle or rigatoni.
  • Chef Tariq insists on using whole milk for the best texture.
