3 lbs pork shoulder, cut into 2-inch cubes
1 tablespoon salt
1 teaspoon black pepper
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
1 inch ginger, grated
1 cup chicken broth
1/2 cup red wine vinegar
1 cup dried plums (prunes)
1/4 cup brown sugar
1 cinnamon stick
3 star anise
1 teaspoon ground cloves
1/2 cup water
Instructions
Season the pork cubes generously with salt and pepper.
Heat olive oil in a large Dutch oven over medium-high heat. Brown the pork in batches on all sides; remove and set aside.
Add onion to the pot and cook until softened, about 5 minutes.
Stir in garlic and ginger; cook for 1 minute until fragrant.
Return the pork to the pot.
Add chicken broth and red wine vinegar, scraping up any browned bits from the bottom.
Add dried plums, brown sugar, cinnamon stick, star anise, and ground cloves.
Bring the liquid to a simmer. Cover the pot tightly.
Reduce heat to low and braise for 2.5 to 3 hours, or until the pork is fork-tender.
If the sauce is too thin, remove the pork and simmer the sauce uncovered for 10-15 minutes until reduced to your desired consistency.
Stir in 1/2 cup of water if the sauce thickens too much during the final reduction.
Remove the cinnamon stick and star anise before serving.
Notes
For the best flavor, sear the pork in batches so it browns properly, not steams.
You can substitute plums with dried apricots for a slightly different sweet profile.
