A quick and creamy broccoli cheddar soup that’s blended to perfection in your blender. It’s a comforting meal ready in minutes.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (about 1 pound)
  • 4 cups vegetable or chicken broth
  • 1 cup milk (dairy or non-dairy)
  • 1 1/2 cups shredded cheddar cheese
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the broccoli florets and broth to the pot. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until the broccoli is tender.
  4. Carefully transfer the soup mixture to a blender. You may need to do this in batches depending on the size of your blender.
  5. Add the milk to the blender. Blend until smooth and creamy.
  6. Return the blended soup to the pot over low heat. Stir in the shredded cheddar cheese until melted and smooth.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a richer soup, you can use half-and-half or heavy cream instead of milk.
  • Feel free to add a pinch of nutmeg or a dash of cayenne pepper for extra flavor.
  • If you don’t have a high-powered blender, you can use an immersion blender directly in the pot.
